Homemade Honey Granola

Granola makes a great breakfast or snack and making it is so simple. While there are tons of great store-bought options, making granola at home allows you to pick and choose what goes in it. Because we're featuring honey as one our sweet solutions this month, this recipe uses only honey as a sweetner.  Other options include maple syrup, agave or brown sugar. To make this Homemade Honey Granola you'll need: -4 cups or rolled oats (use gluten-free certified oats if gluten is a concern) -1 1/2 cups pecans (or whichever kind of nuts you prefer) -1/4 cup safflower oil -1 cup of pumpkin seeds or sunflower seeds -1 cup of fried blueberries (or whichever dried fruit strikes your fancy) -1/2 cup local honey -1/4 teaspoon coarse salt

 Preheat oven to 300 degrees. In a small bowl heat the honey and oil together so that it is liquid. In a large bowl combine oats, nuts, seeds, fruit and salt.  Pour honey and oil over ingredients and stir to combine. Pour mixture in a single layer on a rimmed cookie sheet.  Bake for 30 minutes, stirring twice so the granola doesn't burn. Let cool completely before transferring to a storage container.
