Snacking can often be one of the pitfalls of maintaining a healthy diet. While some think that snacking on carrot sticks can provide the same satisfying crunch of a potato chip, we're not so easily fooled. Sometimes you need something with salt, spice and a satisfying texture to kick a craving in the teeth. Enter Spicy Cauliflower Bites. Not only are these tasty, but they're a great source of fiber and Vitamins C and K. This is a really versatile recipe, but we used a blend of turmeric, which is great for reducing inflammation, garlic and cayenne pepper.
To make this recipe you will need:
1 medium head of cauliflower, washed and cut into florets 3-4 tablespoons olive oil juice from half a lemon 1 teaspoon turmeric 2 cloves garlic, minced 1 teaspoon sea salt 1/4 teaspoon cayenne pepper 1/4 teaspoon red pepper flakes 1 tablespoon fresh parsley, minced
Preheat oven to 400°. In a large bowl toss cauliflower with oil and spices. Spread in one even layer on a cookie sheet and bake for 35-40 minutes, stirring halfway through. Remove from oven and let cool.
