Farmer Advocacy Co-op Team
The Farmer Advocacy Co-op Team (FACT) is a program to help increase awareness about seasonal, local/regional, affordable food. FACT is a multi-pronged effort to provide education and farmer advocacy and promote affordable, good food. The team decided a fork would be a great symbol of this effort; paper signs with forks are placed next to the tags of the food we are sampling or the ingredients in a recipe during the week. Each week FACT samples out a recipe that uses local/regional ingredients and bulk ingredients, is seasonally available, easy to make and inexpensive to buy. Recipes have an approximate serving size and cost, and are on the table for anyone and everyone to take home and try. This amazing team of participating members has a great deal of knowledge about cooking, local food and purchasing food within a budget, and are happy to answer your questions.

FACT is at the Co-op on Fridays from 11am-4pm.

Spring Herb Cheese Spread and Veggie Dip

Makes 16 oz

1 small container Cottage Cheese (16 oz)
6-8 Green Garlic
1 TBSP Parsley, packed
2 cloves Garlic minced
1 tsp dry Dill or 2 tsp fresh Dill
10 fresh Basil Leaves chopped
½ tsp Sea Salt

Combine all ingredients into a food processor or blender and pulse until almost smooth or to your preferred consistency. Let chill one hour before serving with cut up vegetables or as a spread in a vegetable wrap or on a sandwich.

Massaged Kale & Mulberry Salad

Preparation time 15 minutes
Makes 6 servings

1 bunch kale, de-stemmed, cut into bite sized pieces (local)
1 teaspoon salt (bulk)
1/4 cup olive oil (bulk)
2 tablespoons raw apple cider vinegar (bulk)
¼ cup finely diced garlic chives (local)
1 cup mulberries, washed (local)
1/3 cup sunflower seeds, lightly toasted (bulk)

In a small skillet, toast sunflower seeds until fragrant over medium heat, stirring to prevent burning. Set aside.

Put kale in a large mixing bowl. Add salt and massage into kale for approximately 2 minutes.

Gently stir in remaining ingredients and serve.
