Sesame Peas, Please

Peas are such a lovely part of spring. Their bright color and flavor lend themselves to a whole host of dishes. This recipe for Sesame Peas uses delicious Asian flavors and keeps the peas crunchy- just the way nature intended. 

To make this recipe you will need:
2 pounds sugar snap peas, ends trimmed
1/4 cup sesame seeds
3 tablespoons sesame oil
2 tablespoons mirin
1/2 teaspoon sea salt

Bring a large pot of water to a boil. Add peas and cook for two minutes. Remove peas from water and place them in an ice bath to stop the cooking and retain their color.  In a small bowl, combine oil, seeds, mirin, and salt and whisk to combine. Toss peas with dressing and serve.
